Not calling someone by their first name directly is actually a broader standard in Japanese society, one that extends well into our daily lives.

If you call someone by their first name directly, it can sound overly familiar, especially in a business setting. Even among Japanese people who are fairly Westernized, it still feels a little awkward.

For example, if you called your boss “Shohei” (a common Japanese first name) directly, it would come across as quite rude. Using someone’s first name implies a kind of social flatness between you. Your Japanese boss might frown, get annoyed, or, at the very least, you’d be met with an uncomfortable silence. In a case like this, you should call your boss “Mr. Otani” instead.

Here’s another example. If a man calls a woman by her first name directly, it can come across as shocking. Using a first name for someone of the opposite gender often implies that she’s your girlfriend or a family member. You shouldn’t do that. Instead, you should call her “Sato-san.” Note that “-san” is the most common, safest polite suffix to use for almost anyone, except, of course, the Emperor.

I feel there’s one exception to this. It’s quite common for girls to use each other’s first names in conversation. They usually call each other by their first names, or add “-chan” as a suffix, like “Hana-chan.” It shows how close they are.

That said, to stay on the safe side: if you’d like to start using someone’s first name, it’s best to get their approval first.

As for me? You’re welcome to call me Kazuma, at least when we’re speaking English.

As a bike tour guide, I often talk about the Imperial Family when we pass by the Palace. My guests often ask me, “What’s the Emperor’s first name?”

Now I can answer that question very clearly. His name is Naruhito. But when I first started guiding, I honestly couldn’t answer this simple question. I had seen him on TV countless times growing up. Yet I had simply never needed to know his given name. And even now, I still feel a little embarrassed saying his name out loud.

You might be thinking:

“Why didn’t you know the Emperor’s name, when you’re Japanese and he’s the symbolic head of Japan?”

or

“Why would you feel embarrassed just saying his name?”

One cultural difference lies right here. So let me break it down today.

To put it in one word: disrespectful. It’s considered disrespectful to say the Emperor’s name directly. For Japanese people, calling someone by their first name is normally a private thing to do, and doing so implies a kind of equality, flattening the social distance between two people. I’m a commoner, and he is His Majesty. In everyday Japanese life, almost no one calls him by his name directly.

Actually, from birth to death, the Emperor is almost never addressed by the name he was born with.

When he was born, he was officially named Naruhito, but he was also given a formal title, Hiro-no-miya. In the media, he was referred to as Hiro-no-miya again and again while growing up. We came to easily recognize him by that title, but actually saying his given name out loud felt almost taboo.

When he became Crown Prince, he was referred to by that title instead: the Crown Prince. Once again, no matter the situation, he was never called by his given name.

Now that he is Emperor, we simply call him “the Emperor” in everyday life. Since there’s only one, there’s never any confusion. We still never need to say his first name.

What will happen when he passes away? He will still never be called by his given name. Following tradition, every late Emperor is given a new name tied to his era after passing away. Emperor Naruhito’s era is called Reiwa in Japan, so he will probably be called Emperor Reiwa eventually.

This isn’t just about the Emperor, by the way. It turns out Japanese people are surprisingly careful about first names in general, even among friends and colleagues. I’ll save that story for next time, so stay tuned!

The Man Who Rode to the Top

This shrine is famous among local people because of a samurai named Mr. Magaki. One day in the 17th century, the shogun passed by this shrine with his other samurai. He told his servants to climb the steep hill to bring back the beautiful plum blossoms at the top. No one volunteered.

But Mr. Magaki was very good at horse riding, and he decided to try. He rode his horse up the steps, finally reached the summit, grabbed the plum blossoms, and presented them to the shogun. Because of this remarkable performance, he was promoted within the samurai community.

Today, this area is a business district full of office workers, and many of them want to be promoted just as Mr. Magaki was. So they come to the shrine to pray for their own success. Almost every day, you’ll find businesspeople panting as they climb these same steep stairs, hoping for a promotion at the office.

Tokyo’s Highest Natural Hill

Atago Shrine itself sits on top of Atago Hill, one of the highest points in central Tokyo at about 25 meters. In the past, the view from the top of the hill was magnificent, with nothing blocking it in any direction. That’s one of the reasons Atago Shrine became so well known among local people.

Stories That Have Not been Told during My Bike Tour

My bike tour isn’t an Atago Shrine tour, so I always have to cut some parts. Here are a few more stories as an appendix.

The Deity of Fire

Like every Shinto shrine, Atago Shrine enshrines at least one deity, and here, it’s the deity of fire.

During the Edo period, nearly all houses were built of wood, so fire was a constant fear. If one house caught fire, the flames could easily spread to the houses around it. People came to Atago Shrine to pay their respects to the deity of fire and pray for safety whenever they used fire in their homes. That was one of the shrine’s important roles for the local community.

The Sakuradamon Incident

Near the end of the samurai era, in the mid-19th century, the shrine became the stage for major historical events in Japan.

One of them is the Sakuradamon Incident. In 1860, the chief minister, Ii Naosuke, was assassinated at the Sakuradamon Gate of the Edo Castle (currently at the Imperial Palace). This assassination badly damaged the shogunate’s authority and became one of the sparks that eventually led to the end of the samurai era. The men who carried out the assassination are said to have gathered at the summit of Atago Shrine early that morning, prayed here for their success, and then set out to complete it.

The Meeting That Saved Edo

Atago Hill is also said to be one of the possible sites where two of the most famous samurai of the era, Saigo Takamori and Katsu Kaishu, once met and discussed the future of the country. That meeting is remembered as a key moment leading to the peaceful surrender of Edo Castle in 1868.

Near the very end of the samurai era, these two men, representing opposing sides, are said to have talked things through, ultimately avoiding a major battle in Edo and sparing the city from war. Because of that, Edo Castle saw no great battle at the end of the samurai era.

To be honest, there are several different accounts of where these two men met and what they discussed. Some say they talked about the future of the country here on this hill; others say the conversation happened indoors, elsewhere. But one detail feels true to me: they may well have shared this same view of Edo together, worried about a city where so many houses could burn, and thought hard about what kind of future they wanted for Japan.

Why I Still Love Climbing This Hill

Personally, I enjoy climbing to the summit of this shrine not only because of its history, but because of all the guests I’ve hiked up here with over the years.

Some guests climb it easily, as if they had springs in their shoes. I’m the one lagging behind, nearly out of breath by the time I reach the top. Others take it slowly, with plenty of breaks along the way. But every single guest gives me a great smile once they’ve conquered this steep hill. Each of those moments matters to me. Whenever I climb here with a new guest, I remember how excited, and how out of breath, we both were, and the joy we felt once we reached the top together.

A Changing Skyline

Unfortunately, the shrine is now surrounded by so many skyscrapers that we can no longer see the sweeping view of Tokyo the samurai once did from the summit. Another skyscraper is currently being built right next to the shrine, part of an urban redevelopment project expected to be completed by 2028.

Even so, the shrine will remain at the heart of that development. The plan is designed to preserve the view and greenery around it, and the main approach to the shrine will be kept beautifully intact. The dignity of this historic shrine, in other words, isn’t going anywhere.

If anything, this area may only flourish further alongside the shrine.

AI has never actually traveled around Tokyo. It just sums up lots of opinions from the internet. So it often (always) builds a super ambitious itinerary. I sometimes realize at the last minute that my guests used AI to plan their trip, and I have to ask them to reschedule.

So, as a guide in Tokyo, I’d like to propose one idea for your Tokyo itinerary, based on my own experience. Of course, it’s not perfect, but it should work as a basic framework.

Unlike an AI-generated list, this order actually respects geography, your stamina, and your time, while still leaving room for flexibility. You’re not zigzagging across the city, and you’re not trying to pack in a full day at three different ends of Tokyo.

Day One: Tokyo’s Highlights

This is Tokyo. You’ll see neon lights, modern energy, and quiet serenity, all within a single day.

Meiji Shrine

In the morning, head for Meiji Shrine, the largest shrine in Tokyo, surrounded by lots of greenery. You’ll be amazed at how green the city can be. You can enjoy the fresh air and the dignity of the shrine. Give yourself at least one to two hours for your morning walk.

Harajuku, Omotesando

After Meiji Shrine, head to Harajuku. It’s located right across the street from the shrine, so you won’t need to take any trains. Keep in mind that most shops in Harajuku don’t open until 11 a.m., so if you arrive earlier, just relax at a nearby coffee shop. Harajuku is famous for youth fashion and entertainment. If you’re traveling with kids, they’ll love it. Omotesando is the main street of the Harajuku area, lined with high-end brand shops.

Cat Street to Shibuya

While walking through Harajuku and Omotesando, take a detour down Cat Street. This street runs along the old Shibuya River and is full of small, trendy shops, eventually leading into Shibuya.

You’ll arrive in Shibuya sometime in the afternoon or evening, and you’ll enjoy the hustle and bustle of the city. Shibuya Crossing is the most famous intersection in the world, and you’ll become part of the scene yourself. If you book tickets in advance, you can also go up to Shibuya Sky.

Otherwise, there are plenty of other spots nearby to view the crossing. Honestly, once you’ve crossed it, that’s a great way to feel how Tokyo works, but once is probably enough.

Daikanyama, Ebisu or Shinjuku (Optional)

If you have more time, you could spend it in Daikanyama or Ebisu, both very trendy yet local shopping streets, great if you’re after high-end, fashionable spots or nice cafes. Or you could sign up for a food tour in Shinjuku, which will take you to fantastic local restaurants and give you a chance to see the famous Godzilla head and the giant 3D cat sign.

Day Two: Traditional and Historic Tokyo

Let’s focus on the eastern side of Tokyo, the more traditional and historic area.

The Imperial Palace

First, head to the Imperial Palace, the current center of the country and the former site of Edo Castle. Don’t miss Nijubashi Bridge and Sakuradamon Gate. If you have time, you can also walk through the East Gardens of the Imperial Palace, a beautiful, serene Japanese garden. Note that the East Gardens are closed on Mondays and Fridays, so double-check before you go.

Ueno Park, Tokyo National Museum, Kappabashi (Optional)

In the afternoon, the main highlight is Asakusa. Before heading there, you can stop by Ueno Park, where you can enjoy the greenery and, in summer, the lotus flowers. If you have time, spend some of it at the Tokyo National Museum in Ueno Park. From Ueno Park to Asakusa is about a 20-minute walk. Along the way, you’ll pass through the Kappabashi area, famous for its kitchenware street. Even if you’re not a chef, it’s fascinating to see the Japanese knives and ceramic bowls.

Asakusa

Finally, you’ll arrive in Asakusa, home to Sensoji, the oldest temple in Tokyo. Pass through the famous gate, and you’ll find a whole street of food stalls in the surrounding neighborhood. At the end, you’ll reach the Sumida River, a great spot to view Tokyo Skytree.

Day Three: Build Your Own Day

This is an optional day. Tokyo has so many fascinating and unique areas that you can build your own itinerary based on your interests.

If you’re an anime fan, head to Akihabara or Ikebukuro.

If you want more shopping, try Nihonbashi or Ginza.

If you’d like to see a market, Tsukiji Outer Market is available. It’s touristy now, but you’ll still find plenty of energy there.

Or, if you’d like a more local experience, head to Yanaka.

You could also try an activity like a bike tour, tea ceremony, or sushi-making class. These make for unforgettable experiences.

Day Four: A Day Trip From Tokyo

Most tourists visiting Japan spend about three days, but if you have one more day, consider a day trip out of Tokyo. The following spots are all popular for a one-day trip. Some people stay overnight, but you can manage a day trip if you’re willing to wake up early. Here are the lists I like:

• Kamakura, home to many temples

• Tokyo Disney Resort

• Hakone, known for its hot springs and (on a clear day) views of Mt. Fuji

• Mt. Takao or Mt. Nokogiri, hiking

This is a basic idea as of 2026, just a rough starting point. Feel free to use it as a reference and customize it to fit your own trip.

If you are in Tokyo in late July, you might find some kids getting very excited. Because now is the time for them to start their summer holidays, which last about 40 days. However, through conversations with my guests from western countries on my bike tour, I’ve found there are several differences between Japanese schools and schools in western countries. So here are five things I think are quite unique to Japan. Let’s see.

Number 1: The Timing and Length of Summer Holidays

The duration and the timing are a little different. Most schools in Tokyo go on summer holiday from around July 20 to the end of August. This marks the end of Term 1, and students receive their academic reports. Of course, it depends on the region in Japan, but this is the most typical schedule in Tokyo. I’ve come to realize that some schools in other countries take about two months off, so it’s very interesting.

Number 2: Radio Taiso, the Morning Exercise Ritual

Students have early morning activities almost every day during the summer holidays. It’s called Radio Taiso in Japanese, meaning morning exercises done while listening to the radio. Every morning at 6:30 a.m., we turn on the radio in a park or at a shrine, and people gather to stretch out to the music. It’s an early morning tradition during the summer holidays. After stretching, students chat together or collect stamps from the event organizer. If they complete all the stamps, they get a prize.

The idea behind this activity is that adults want children to keep waking up early, even during the summer holidays. Without any morning activity at 6:30 a.m., kids would gradually get used to sleeping in, and end up staying in bed until midday. And that’s not something any parent wants.

Number 3: A Mountain of Summer Homework

Students have lots of assignments for the summer holidays. They have math drills, writing practice for Japanese characters, book reports, or independent research projects. They also have to submit a summer schedule outlining which tasks they’ll do, and when. It’s a ton of activities to complete over 40 days.

But in reality, at the beginning of the summer holidays, many students (myself included, as a boy) forget about their assignments, and gradually start to feel stressed. Then, in the last few days of the holidays, they finally sit back down at their desks and rush through their summer assignments. In some families, all the family members cooperate to help finish the work.

I believe this is part of the discipline built into Japanese schooling. Teachers want some oversight of what students are doing over the holidays, and parents feel more at ease knowing their kids have assignments to work on at home — otherwise, they might not do anything at all.

Number 4: School Days During the Holidays

Even during the summer holidays, students often have to go to school. At my school, August 1st — right in the middle of the holidays — was a day for kids to go in, say hello to teachers, and go home. It felt like a strange little interruption in the middle of the holidays, and honestly, I still don’t fully know the reason behind it.

For some schools, like those in Hiroshima, there’s also a school day on August 6th to mark that historic day from World War II.

As you get older and become a teenager, you’ll likely join a club activity at school. Once you’re part of a club — which most students are — you’ll go to school to practice. If you’re in the baseball club, for example, you’ll practice almost every day. So even though it’s technically the school holidays, you might still be at school nearly every day.

Number 5: Summer Festivals and Fireworks

Lastly, most students get excited about the summer holidays because of summer festivals. You change into a yukata or another kind of traditional Japanese kimono, and head out to a festival at night. When I was a young boy, I wasn’t normally allowed outside at night, but that day was special. I’d grab some coins and head to the festival to buy food from the street stalls. Then, lying on the grass, we’d watch the fireworks light up the sky.

That’s the five main differences between Japanese schools and other schools around the world. Are you still curious? Or did you notice some other differences?

A Japanese convenience store chain, FamilyMart, launched an ambitious shop called FAMIMA PARK AZABUDAI on July 10, 2026. Is this newly opened flagship store in Azabudai, Tokyo, just another convenience store, or a rebranding of our lifestyle? Here is my report from a visit on their second day of opening.

What is FamilyMart?

You can skip this part if you already know the basics of Japanese convenience stores and how different they are from those in the States or elsewhere. Japanese convenience stores are infrastructure in Japan. They’re usually open 24 hours, and you can buy not just a variety of food and drinks — onigiri rice balls, egg sandwiches, bento boxes, beer, wine, water — but also daily necessities like USB chargers, sun protection, umbrellas, souvenirs, or even Apple products. For local people, you can also pay taxes, send or receive parcels, or use the printers. They now function as a kind of social infrastructure. In a word: convenient.

FamilyMart is one of the top three convenience store chains, alongside 7-Eleven and Lawson, and boasts over 16,000 locations in Japan alone. Almost every traveler to Japan has visited one of these stores at least once, whether for freshly brewed coffee or a piece of boneless deep-fried chicken called Famichiki. In recent years, they’ve also started selling their own private-label apparel, so you may have picked up a shirt or a pair of socks there too.

My Experience at FAMIMA PARK AZABUDAI

So, what is this new FamilyMart? Seeing is believing. I went to FAMIMA PARK AZABUDAI on the second day it was open. To make it fair, I visited the shop around 8:00 a.m. on a Saturday morning.

Their Own Characters

As soon as I walked into the shop, I found a wide range of character merchandise. As FamilyMart’s president has said, they want to build their own intellectual property. The “F” logo character seems set to become symbolic of the new FamilyMart.

Lots of Apparel

FamilyMart has been doing very well in this area recently. Their apparel line, called “Convenience Wear,” has a strong reputation and sells especially well among foreign tourists. According to Nikkei, FamilyMart is aiming for a 50% increase in apparel-related sales for fiscal 2026, targeting roughly 30 billion yen — driven by new items like watches and cotton-linen shirts alongside their core socks and handkerchiefs. Part of the reason behind this growth is that FamilyMart’s parent company, Itochu, originally started as a textile trading company, and its fiber division is directly involved in developing much of the lineup. That backbone gives FamilyMart real strength in apparel. The line itself is designed in collaboration with fashion designer Koji Ochiai of FACETASM, not by NIGO®, whose creative direction is focused on the FAMIMA brand and store experience as a whole.

At FAMIMA PARK AZABUDAI, there’s a wide space dedicated to these products, and even a fitting room.

Coffee Stand

Coffee is another area where FamilyMart has been raising its game. Mr. Kasuya, a champion barista, oversees the quality of the coffee served at FamilyMart stores. To serve it more efficiently, there’s a coffee stand outside the shop, so people can grab a coffee without stepping inside. There are also benches outside where people can sit and enjoy it.

When I visited early in the morning, though, the stand hadn’t opened yet.

Famichiki

One of FamilyMart’s signature products is Famichiki, a juicy piece of boneless deep-fried chicken. It’s addictive enough that you — especially teenagers — can end up eating it every day. At this store, Famichiki is stocked generously, so it’s easy to grab one right near the register.

I actually bought a Famichiki keychain. I’m told it’s an item exclusive to this store, so it made for a nice memento of the visit.

Plenty of Finger Food

This part of Azabudai is busy with office workers and tourists alike, so people often want food they can grab in a bag and eat in just a moment. Maybe that’s why the store keeps such a wide stock of that kind of food. I even found my favorite gluten-free biscuits here, so I picked one up.

My Verdict

I can tell they wanted to make something genuinely new, and NIGO®’s creative direction for the store itself is certainly different from anything I’ve seen at a convenience store before. Still, at its core, this is a FamilyMart. I respect the challenge they’ve taken on, but right now, the products front and center — the apparel, the Famichiki, the coffee — are all things already available at any other FamilyMart. I like their challenge very much, and I hope this new frontier for FamilyMart becomes a genuine part of life in Tokyo.

FAMIMA PARK AZABUDAI

There is one easy way to learn and enjoy a different culture: eating. But, as someone once said, “Eating is sometimes adventurous.” What is regarded as barbaric in one culture can be considered totally different in another. Some people like this, while others don’t. It may be a life-or-death experience to eat some unfamiliar food in a certain culture.

Japan has so many unique foods and desserts for people from other countries. The dessert I would like to introduce to you today is Dorayaki. Don’t worry. It’s not so adventurous compared with other Japanese sweets.

There are three different ways to describe this Japanese sweet.

1. A very classic Japanese treat

2. A very famous Japanese anime robot, Doraemon’s favorite snack

3. A Japanese-style pancake sandwich

A Very Classic Japanese Treat

Dorayaki is a very traditional but still beloved Japanese sweet. It is typically served with Japanese tea. So, if you love matcha, Dorayaki is a good partner. It’s yin and yang.

A Very Famous Japanese Anime Robot, Doraemon’s Favorite Snack

Dorayaki is loved by a very famous Japanese anime robot, Doraemon. Almost all Japanese people know this character from TV, and everyone knows his favorite food is Dorayaki. In a sense, Dorayaki is a beloved food for Japanese people. If you are a Japanese anime fan, you must try this traditional Japanese sweet.

A Japanese-Style Pancake Sandwich

Seeing is believing. If you were reading this article in Japan right now, just go to the nearest convenience store or a local sweets shop. But many of my readers are not in Japan now, so let me try to explain this sweet.

Dorayaki consists of two pancakes sandwiched together. It’s as fluffy as Western pancakes. The inside of the pancakes is anko, which is a sweet red bean paste.

Sweet red bean paste???

What? What did you say?

Sweet beans?

Don’t worry. This is a very typical reaction from those who have a Western background. When sweets come to mind, you might think of chocolate, vanilla, caramel, or fruits. On the other hand, when it comes to beans, you probably imagine a side dish, like french fries (chips), served with a main dish. So, you may get confused by this unexpected combination.

Let’s get back to anko, a sweet red bean paste. It is carefully mashed and cooked with sugar, so you won’t know what it is unless you are told the ingredients. I know it’s too late since you already know, but if possible, don’t connect your usual image of beans with this Japanese sweet.

It’s sweet, but typically not too sugary. Sometimes it comes with butter or other ingredients.

Delicious Dorayaki Shops

“Where can you get Dorayaki?”

You might be wondering this. The simple answer is, “Go to 7-Eleven or other convenience stores.” But for those who want to try something more local and special, let me introduce three different local sweets shops. These are my recommendations based on my experience as a guide in Tokyo.

Takaraya

Takaraya is a mom-and-pop Japanese sweets shop located in Kitasenju. “Takara” means treasure and “ya” means house, so Takaraya means “treasure house.” All of the items available at this shop feel like treasures, just as the shop name suggests, and the shop assistant always greets you with a warm smile. Some Dorayaki contain chestnuts, so you can choose such a customized version if you want. After buying sweets here, you can go to the riverbank of the Arakawa River, which flows just three minutes away from the shop, and bon appétit!

Kameju

Kameju is one of the most famous Dorayaki shops in Tokyo, so there is often a long queue in front of their shop in Asakusa. You may have to wait for your turn for up to an hour, but their Dorayaki is worth it. It is a little larger than those from other shops. The fluffy texture of the pancakes and the not-too-sweet anko are lovely. Tell any Dorayaki lover about it, and they'll be jealous you got to try it

Usagi

Another champion of Dorayaki is Usagi. They have two shops: one located in Ueno and the other in Nihonbashi. They are related, but surprisingly different. The original shop is the one in Ueno, and a family member later became independent and opened the Nihonbashi shop. Try both Dorayaki and taste the difference! Now you are a Dorayaki expert!

Is It Really Good?

Are you still worried about trying this Japanese sweet? Let me share one fact with you. According to my own informal survey as a bike tour guide in Tokyo, 50% of visitors from Western countries say, “It’s yummy, excellent, delicious.”

The other 50% say, “It’s interesting. It’s a good experience in Tokyo.”

So my question is, “Which 50% do you belong to?” Tell me!

One Morning at Starbucks in Asakusa, Tokyo

The other day I was having a cup of morning coffee at Starbucks in Asakusa. This is my typical breakfast to kickstart my guiding. I was double-checking as much information for the guests on the day as possible, and then this happened.

A large group of tourists came into the Starbucks. Some ordered coffee, while others sat down without ordering anything. Others stood in the middle of the café, chatting, taking photos and videos. After a few minutes, the group moved on together—including those who hadn’t ordered anything.

Throughout that day (and even now) I have had one thing in mind:

It reminded me how easy it is to miss unwritten customs when visiting another country. If no one explains them, how could visitors possibly know?

Every culture has unwritten rules. We usually don’t notice them until someone from another culture unknowingly breaks them.

I want to be clear—this isn’t about blaming tourists. Nobody wakes up wanting to make local people uncomfortable. Most travelers I meet genuinely want to enjoy Japan and respect it (thank you!). The problem isn’t bad intention. It’s simply that nobody told them. I wish they had known before coming to Japan.

So today, as a bike tour guide in Tokyo, I want to share three things I wish every visitor knew before they arrive—not to call anyone out, but because knowing them can quietly change the whole experience, both for you and for the people around you.

1. Keep Your Voice Down in Public Spaces.

In Japan, quietness in shared spaces is a way of showing consideration for people you don’t even know. A quiet train car, a quiet café—these aren’t cold or unfriendly. They’re a kind of everyday respect for each other.

If you have joined my bike tour, you might remember me guiding you through very narrow back alleys where lots of houses line up side by side. Each house is made of thin wooden panels with sleek glass windows. Or if you have the chance to visit a Japanese house or a ryokan, you’ll notice some rooms are divided only by a thin sliding door called fusuma. In a community like that, everyone can hear almost every sound from their neighbors. So naturally, we’ve learned to speak quietly out of respect for each other.

I sometimes wonder whether that kind of traditional lifestyle helped shape today’s culture of quietness. I was taught not to speak loudly in public when I was a very young boy. So chatting loudly in public—at a Starbucks, for instance—tends to stand out more here than it might elsewhere.

This quietness carries over to train cars, too. You’ll see local people sleeping or scrolling through their phones in near-total silence. If you start speaking loudly across the aisle, you may notice a few curious glances.

2. Order Something When You Take a Seat at a Cafe

If you take a seat, it’s generally expected that you’ll order something.

Many small cafés and restaurants in Japan run on limited seating. A seat taken without an order isn’t just “no big deal.” For a small shop, it can mean an actual paying customer has to wait—or worse, walk away. It’s less a rule of etiquette than a matter of helping small businesses stay afloat.

For example, if you’re a group of four taking four seats at a café, it’s generally expected that everyone orders something. In some countries, ordering is optional once you’ve sat down. In Japan, if you’re not planning to order, the polite move is usually to wait outside instead.

3. Try Not to Eat or Drink While Walking

This one may surprise people the most.

In Japan, eating while walking isn’t necessarily forbidden, but many people still try to avoid it.

One reason is practical: it’s easier to bump into someone, spill food or drinks, or leave a mess behind.

Another may be cultural. Traditionally, meals have been treated with a certain sense of appreciation and respect. Sitting down to eat has long been seen as a more mindful way to enjoy food.

My mother used to get a little stressed whenever I ate outside, even standing still. “Eating outside isn’t really proper,” she’d say. Attitudes have loosened a bit since then, but eating while walking is still generally something many people prefer to avoid here.

To be a Bridge between Two Cultures

Most Japanese people are as friendly as you are. If we take the time to understand each other’s cultures, we end up building better relationships—and I’d love to be part of that bridge. That’s exactly why I do what I do. On my bike tours, I don’t just point at tourist spots—I try to explain the “why” behind what you’re seeing, so that by the end of the tour, Tokyo makes a little more sense than it did that morning.

This phrase is so abstract that it’s often difficult to truly understand. This is the second article in a series aiming to make this concept more concrete.

Walking through Kappabashi, a stylishly packaged soy sauce shop catches your eye — a banner reading “Soy Sauce” fluttering at the entrance. It was a serendipitous discovery during one of my bike tours, and that’s where this whole story began.

The shop is called Soy & Co. 1879, which collaborates with the long-established Suehiro Soy Sauce brand, Oginoichi — and has recently introduced Beauty Soy Sauce, a fruit-flavored line. This time, I sat down with Mr. Okazaki to hear about his passion for his soy sauce business.

1. From Fashion to Soy Sauce — The Road to Kappabashi

Training in a different industry

Mr. Okazaki’s career started far from soy sauce. After graduating from university, he spent nine years in car sales for Mercedes. He then went independent, running an apparel and shoe shop in Akasaka and Hibiya for over a decade, importing goods from Europe. He would often travel to Italy and France for buying trips, competing directly with department stores and select shops. As competition with major department stores intensified, however, Mr. Okazaki decided it was time for a new challenge, and chose to close the apparel business on good terms.

A relative’s closure sparked the change

Having spent years in importing, he next set his sights on exporting. Around that time, soy sauce happened to be close at hand. A relative’s long-established shop had for years generated half of Suehiro Soy Sauce’s total sales. But when the uncle who ran it, and later his cousin, passed away one after another, the shop closed.

“What a sad story if such a long-lasting brand disappeared.”

That feeling was what led Mr. Okazaki into the world of soy sauce.

I had been involved in importing, so I wanted to focus on exporting now. Soy sauce sales happened to be close to me, so I wanted to preserve it and convey its real value.

In 2010, he launched his first soy sauce shop near Gakugei-daigaku Station. That became the origin of what is now Soy & Co. 1879. The shop quickly gained a reputation and was featured on numerous TV programs, but the COVID-19 pandemic forced a temporary closure.

Opening the Kappabashi shop

As the pandemic impacts subsided in 2024, Mr. Okazaki started considering new shop locations. Among several candidates, he chose Kappabashi — a district for restaurant owners and chefs, lined with wholesale shops catering to the food industry. In recent years, it has also drawn a growing number of international visitors shopping for Japanese kitchen knives, making it a fitting location for selling soy sauce.

That may sound like a calculated strategy, but the truth was actually the reverse. He chose the location largely because of an existing connection with a customer there. It was only after opening the shop that international visitors gradually began to increase — turning out to be the perfect place for his desire to “export Japanese things to the world.”

2. The Origin of “Conveying Something Authentic”

Most soy sauces sold in supermarkets are produced in just one week to a month. This makes them more affordable and easier to distribute widely, but it also means relying on additives to create umami flavor.

Ogiichi Soy Sauce, by contrast, uses domestic ingredients and takes several months — sometimes over two years — to brew. Mr. Okazaki puts it simply: “I want to convey something authentic.”

That’s why it’s important to regularly pump in oxygen to keep the microorganisms alive and preserve the flavor. Rather than relying on additives, he values the time it takes to draw out true umami. Looking at the slash-separated additive lists on the back of many supermarket soy sauce bottles, Mr. Okazaki is honest: “When I see that, I even start to wonder if it’s even soy sauce anymore.” His commitment to authenticity comes through clearly in that remark.

I want to convey products with real craftsmanship as things that represent Japan.

3. The Eye for Presentation, Honed in Fashion

Step into the Kappabashi shop, and the first thing that catches your eye is the packaging design. The sleek, almost Apple-like appearance is no accident — it’s a direct result of the sense of presentation Mr. Okazaki developed during his years in the fashion industry. His experience traveling to international trade shows — in Shanghai, Hong Kong, Taiwan, Singapore, and beyond — also plays a role. The labels carefully balance English and Japanese, conveying not just authenticity but also a distinctly Japanese feel.

4. A New Kind of Soy Sauce: Fruit-Flavored

Mr. Okazaki’s latest project is a fruit-flavored soy sauce line. Flavors like banana and strawberry are infused into the soy sauce. It might sound unconventional at first, but thinking through new pairings of soy sauce and ingredients turns out to be genuinely fun. A quick drizzle over salad works well, but personally, I’ve been excited imagining other combinations too. As Mr. Okazaki explains:

I want to keep developing new offerings alongside our traditional soy sauce.

Since they come in small bottles, they’re also popular as gifts — customers often buy them as presents. They’re also used at Michelin-listed restaurants.

5. Tasting: A New Kind of Experience

A soy sauce shop where you can actually taste the products before buying is rare in this industry. While most soy sauce makers focus on wholesale and offer only a limited range, Soy & Co. 1879 offers a hands-on tasting experience with multiple soy sauces to try in Kappabashi. This, in itself, is a statement of confidence. The most reliable way to convey the quality of a soy sauce is to let people taste it themselves.

Letting customers confirm the flavor before purchasing benefits both the shop and the customer — and it’s only possible because of real confidence in the products. This approach has earned strong recognition, and inquiries from overseas have been steadily increasing. (There’s also a connection to guests from my bike tours who stopped by the shop — yes, a nice bonus!)

Many international visitors say that in their home countries, “soy sauce” means just one single type. For them, the chance to try many varieties is a genuine surprise. At first, the shop’s customers were almost entirely local, but the share of international visitors has been steadily growing.

After the Interview

From importing to exporting. From fashion to soy sauce. Talking with Mr. Okazaki reaffirmed something I already believed. Whether it’s a bottle of soy sauce or a bike tour in Tokyo, the value lies in something authentic. As I went back home through Kappabashi, I found myself thinking about the next ‘authentic’ story I want to share.

If you joined my bike tour, you might have crossed Nihonbashi bridge — and you might remember me stopping there to share a bit of history. But the truth is, I never have enough time to tell you everything about it.

Nihonbashi is the center as the name describes

This is the typical script I prepare for my bike tour here.

Nihonbashi literally means

Nihonbashi is actually made up of two Japanese words. “Nihon” means Japan — the same as “Nippon.” And “bashi” means a bridge in Japanese. So, Nihonbashi means “Japan bridge.”

Nihonbashi, center in the past

As the name says, Nihonbashi, or Japan bridge, has been the center of this country both then and now. In the past, at the time of the Edo Samurai era, the five major roads (Tokaido, Nakasendo, Koshu Dochu, Oshu Dochu, Nikko Dochu) started at this bridge, so it was a huge junction. Also there used to be a port for the market at the riverbank near this bridge, so we can easily imagine how bustling this area must have been.

Even after the samurai era, Nihonbashi stood as the center of this country. The business center in Tokyo was established as if it surrounded the bridge. For this reason, JPX, Mitsukoshi Department Store, and Takashimaya Shopping Center are located in this area.

Nihonbashi, after 1964

One major milestone in Tokyo is the 1964 Olympics. Japan was selected to host the Olympics in 1959, giving the country only five years to prepare. The infrastructure had to be rapidly built at that time. One major challenge was highways, but Tokyo had so many buildings and houses that they had no space to build them.

Their solution was drastic. They decided to build the highways over the rivers or fill in the rivers entirely and build highways in their place.

This unique idea contributed to the success of the Olympics, and the highways were left as an Olympic legacy. However, there was a drawback: the landscape over the historical Nihonbashi was destroyed. The highway was built over the river and the bridge, covering it like a blanket — no one can see the sky when crossing the bridge.

Nihonbashi, center even now

Now, Nihonbashi doesn’t seem to be the commercial center of this country any longer. Major shopping areas have shifted to Ginza, Shibuya, or Shinjuku. But it is still the geographical center of this country.

If you look at the very center of this bridge, you will find a plaque on the road. It marks point zero. Every road sign in Japan still shows the distance from Nihonbashi. For example, if you see a sign saying “30km to Tokyo”, it is 30km from Nihonbashi.

Nihonbashi, to 2040

The Japanese government announced a plan in 2019. Since the highway is aging, they have decided to remove it from above Nihonbashi and relocate it underground. Once completed around 2040, the blue sky over the bridge will be fully restored (as in the AI-generated picture).

2040 is a bit away, but if I am still a bike tour guide in Tokyo, I would like to see the new landscape with my guests.

Stories that have not been told during my bike tour

My bike tour is not a Nihonbashi tour, so I always have to cut some parts. Here are three more stories as an appendix. Two are related to the catastrophes of Tokyo, and the last one is my bucket list.

Nihonbashi and the Great Kanto Earthquake in 1923

Japan often has earthquakes. One of the most serious in Tokyo occurred in 1923 at lunchtime, killing over 100,000 people. This earthquake left a serious impact on Nihonbashi bridge and its area.

The bridge itself was solidly built of stone, so it didn’t fall down. But burning debris floated down the river and piled up against the bridge, causing a huge fire. You can still spot some black dots on the bridge — the remnants of that fire.

Also, the Nihonbashi area in those days was home to a vibrant fish market, but almost all of it was destroyed by fire. It was the end of the Nihonbashi fish market, and the beginning of the Tsukiji Market.

Nihonbashi and WWII in 1945

Another catastrophe came at the end of WWII, during which Tokyo was firebombed heavily. Nihonbashi was one of the areas hardest hit. The raids occurred over 80 years ago — most readers and I were not yet born — but you can still find remnants of the tragedy on the bridge.

When you walk on the bridge, you will see scorch marks on the stonework. These are traces left by the fires. You will also find holes in the steps of the bridge, left when firebombs were dropped. You might think these are simply signs of age, but they are quiet reminders of the reality of WWII.

Nihonbashi and my bucket list

Nihonbashi used to be the starting point for travelers during the Edo period. And now, for me too.

It has been the starting point for five major roads in Japan. I want to cycle through all five one day.

In 2019, I completed the Old Nikko Dochu, which lasts about 140km (or 80mi) to Nikko. It took me two days.

In 2022, I completed the Old Tokaido, which lasts about 450km (or 300mi) to Kyoto. It took me one week.

In 2023, I completed the Old Oshu Dochu, to Shirakawa. It wasn’t too challenging — two days was enough.

I have two more that I have not completed: Old Nakasendo and Old Koshu Dochu. These two are the toughest as they go along the hilly line from Tokyo. Especially Old Nakasendo goes through 69 stations from Nihonbashi to Kyoto, which is the longest and hilliest.

I am youngest for the rest of my life. When I was young, I had lots of stamina but no money. When I become old, I will hopefully have money but no stamina.

Then, when should I start my next bike journey to complete these five main roads?

I want to share what happens just before the beginning of my private bike tour. This is about what time you should arrive when you have an appointment with Japanese people.

Let’s say you have an appointment at 9:00. What time will you arrive?

If you say, “I’ll be there at 9:00,” and it’s a business meeting with Japanese people, your business may not go as well as you expect.

Every society has its own customs. When we’re in a different culture, we often break these unspoken rules without realizing it. Everyone knows that cultures differ, but when you respect the other person’s customs, communication becomes much smoother.

The Unspoken Golden Rule for Appointments in Japan

In Japan, the unspoken golden rule for appointments is to arrive 5–10 minutes earlier than the scheduled time. Not 15 minutes early, and not exactly on time. There’s a surprisingly narrow “strike zone” that feels ideal.

What if you arrive too early?

So what happens if you arrive too early?

Your host may not be ready yet. They might panic, rush to clean up, or stop what they’re doing midway just to meet you. To avoid causing this pressure, Japanese people who arrive very early usually wait nearby — on a bench, in a park, in the restroom, or at a Starbucks. We don’t knock on the door until the meeting time gets closer. We quietly pass the time until the right moment arrives.

What if you arrive on time?

Then why isn’t it good to arrive exactly on time?

If you arrive right at 9:00, your host may already be worried about you. They may start wondering if something happened to you on the way. To avoid making your host feel uneasy, arriving exactly on time is not ideal either.

In fact, many Japanese people are trained from a young age to move five minutes early. At school, especially during events like school trips, students are strictly taught to arrive five minutes ahead of schedule. So if a meeting is set for 9:00 a.m., we automatically think of 8:55.

If you arrive at 9:00 sharp, it must be too late.

What if you arrive late?

What if you arrive late?

That’s considered very impolite. If the meeting is with a close friend, it may be forgiven. But in a business setting, being late can seriously damage the relationship.

There are many excuses for being late — heavy traffic (yes, always), a delayed train (very rare), unexpected problems — but in Japan, excuses don’t carry much weight. They don’t erase the fact that you were late.

The best timing

If you have an important meeting with a Japanese person, my advice is simple: arrive in the neighborhood 30–60 minutes early, have a coffee at Starbucks (but don’t bring it to the meeting), and then head to the meeting place 5–10 minutes before the scheduled time. That’s the perfect timing.

Of course, even when we try our best, sometimes we do end up being late. In that case, the moment you realize you won’t make it on time, you’re expected to contact the other person immediately and clearly tell them when you will arrive.

Japanese punctuality can be stricter than you expect. One clear example is the train system. In Tokyo, trains often arrive every three minutes, and everything runs according to schedule. If a train is delayed by even 30 seconds, you’ll hear an announcement like:

“Due to emergency assistance for a passenger, this train is slightly delayed. We sincerely apologize for the inconvenience caused and thank you for your understanding and cooperation.”

You might think, “But my host looked happy even though I was a few minutes late.”

Yes — that’s diplomacy.

To save you from embarrassment, we smile and act polite even if you’re late. Japanese people understand that different cultures have different norms, and they respect that. Still, your host almost certainly felt unhappy while waiting.

And my case?

As a guide, I’ll always greet you with a smile. I understand that guests come from different cultures and may be dealing with jet lag or travel stress.

But as a Japanese person, I usually arrive 30–60 minutes early, find a nearby café to have a final check, and then head to the meeting spot 10–15 minutes before the scheduled time. From there, I send my guests a quick message to let them know I’m already there and looking forward to meeting them.

If I don’t hear anything five minutes before the meeting time, I start to feel a little uneasy — even though it’s still early. That feeling is automatic.

And when my guests arrive exactly on time, I’ll show my perfect smile — because now I know they’re safely here. 😊

Usually, I share stories from the busy streets of Tokyo as a bike tour guide. But recently, I took a short break, left the dense city behind, and traveled down south to Kumamoto. Of course, I had to explore the area by bike!

But wait... when most international first-time travelers plan their Japan itinerary, they usually take the famous “Golden Route” of Tokyo, Kyoto, and Osaka. They look forward to skyscrapers, ancient temples and shrines, or maybe a ski trip to Niseko or Hakuba and an onsen getaway in Hakone.

So, why did a Tokyo bike tour guide choose Kumamoto?

Because I was looking for a huge contrast to Tokyo. I was looking for a deeper, more rural side of Japan, and what I discovered there has made my view of my job much clearer. In fact, I realized what it truly means to be a bike tour guide.

Let me take you on a journey through the grand landscapes of Kumamoto, and show you exactly what I mean.

The Magnificent Caldera

The absolute highlight of any Kumamoto trip is the Aso region.

Aso in Kumamoto is world-famous for having one of the largest volcanic calderas on the planet. A caldera is a massive bowl-shaped depression formed after a volcanic eruption. The shape is like a frying pan. The one in Aso is so huge that its perimeter stretches about 128 kilometers (80 miles)!

Inside this massive caldera, a vibrant local community thrives, maintaining an authentic, rural lifestyle. As you explore, you will see green, lush fields and peaceful pastures with cows and horses. Seeing is believing. Take a look at some of the photos I captured!

To make it simple, it is absolutely beautiful.

Not Just the Beauty: A Guide’s Perspective on Riding Two Wheels

As a bike tour guide in Tokyo, I spend my days guiding guests through a fascinating urban landscape. In Tokyo, you will find a drastic change of scenery. One minute you are riding under skyscrapers, and the next, you are tucked away in a peaceful backstreet.

Riding in Aso felt completely different. Instead of dynamic urban shifts, I found myself surrounded by endless green fields and peaceful pastures.

But here is the thing: if you just rent a bike and ride around on your own, you will probably just say, “Wow, it’s beautiful. So massive,” and leave it at that. To truly appreciate Aso, you need a local guide.

Inside the world’s largest caldera, every mountain, pasture, and quiet village has a story. One place you absolutely cannot miss is Kumamoto Castle.

Again, I got a guide here. Without a guide, I would have only thought: “Wow, this is the nationally famous Kumamoto Castle. It’s so massive, and the damage from the earthquake is so tragic.” End of story.

No bike tours are available inside the castle grounds, but luckily I found a local volunteer guide. He was so knowledgeable that he could answer any question I asked, and he added so much fascinating context about the castle and the city.

One thing I vividly remember was a story about the 2016 earthquake and the reconstruction work after the tragedy.

Can you believe that tens of thousands stones from the collapsed walls are being numbered, cataloged, and moved back to its exact original position, piece by piece? It’s like a giant jigsaw puzzle. Instead of just seeing the tragedy of a natural disaster, you get to witness the incredible spirit of the Japanese people who refuse to rush, choosing instead to preserve their culture properly for the next generation.

Kumamoto Gourmet: Local Dishes You Must Try

I know local food experiences are a great part of a journey, so let me share three signature dishes in Kumamoto.

Basashi (Horse Meat Sashimi)

While beef, pork, and chicken are the standard meats in Japan, horse meat is incredibly popular in Kumamoto. While it can be enjoyed grilled, the most traditional way to eat it is completely raw, sliced thin like sashimi. It is called Basashi (ba means horse, and sashi is short for sashimi). It’s incredibly lean, tender, and goes perfectly with a cold beer!

Akaushi (Red Beef)

Akaushi is another local delicacy you will love—and yes, it is definitely beef! While most Japanese Wagyu cattle are black, Akaushi literally translates to “Red Cow” due to their reddish-brown coats. The meat is tender, perfectly marbled, and has a naturally sweet, rich flavor. It’s a must-try during your stay.

Karashi Renkon (Spicy Lotus Root)

For a unique crunchy snack, try Karashi Renkon. This is a lotus root where the holes are stuffed with a kick of hot mustard (karashi) and miso, then coated in a light batter and fried. It was originally created centuries ago as a health food for a local feudal lord, and it remains a famous local favorite today!

Trying these local dishes made me realize that food, just like travel, is all about the right combination of flavors and history.

Lastly: Bringing a Piece of Kumamoto Back to Tokyo

My journey to Kumamoto reminded me of why I love my job so much. Visiting a place without a guide is fun, but it’s just fun. It’s like a spaghetti bolognese. Any bolognese has meat and tomato in the sauce, and you can enjoy it just fine. But what if you added a special secret spice, like a splash of red wine or a dash of soy sauce? It transforms the whole dish.

I am that spice. Without a guide, your trip is still good, but adding one transforms the experience into something unforgettable.

If you walk through Otemachi, a financial center, during a weekday morning, everything feels efficient.

Today, Otemachi sits next to the Imperial Palace and contains some of the most expensive office real estate in Japan.

Men and women in dark suits walk fast.

Glass towers reflect other glass towers.

People check their smartphone, elevators rise, meetings begin.

It looks like the most modern version of Tokyo.

And yet, right in the middle of this district, there is a small open space.

No skyscraper.

No café.

No explanation sign large enough to compete with the buildings around it.

Only a quiet tomb.

This is the resting place of Taira no Masakado, a warrior who lived more than a thousand years ago.

When Tokyo Was Still the Countryside

In the 10th century, this area was nothing like it is today.

It was said to be rural. Fields, paths, small communities.

Kyoto was the capital of Japan, far to the west.

Power, law, and authority all flowed from there.

Masakado rose in eastern Japan, far from the center.

He challenged the government and eventually declared himself a new emperor.

To the people living here, he was a hero.

To the authorities in Kyoto, he was a rebel.

Remembering the Losers

Masakado was defeated and killed by government forces.

In many countries, history is written around the winners.

In Japan, things are not always so simple.

Here, it is often the losers - not the victors - who remain in local memory.

After Masakado’s death, people in this area built a tomb for him.

Not to celebrate rebellion, but to remember someone who stood on their side.

He has been respected and feared by the local community for a long time.

But, the story doesn’t end here…

A Presence That Should Not Be Ignored

In Japan, there is a long-held belief that those who die violently or unjustly may become restless spirits.

Masakado came to be feared as one of them.

Not evil.

But powerful - and not something to ignore.

When Tokyo began transforming into a modern city, people tried to relocate his tomb.

In 1923, after the Great Kanto Earthquake, the government planned to relocate it to build a new Ministry of Finance building.

Soon after, several officials involved in the project died suddenly.

After World War II, the Allied occupation authorities tried again.

They planned to remove the tomb and turn the land into a parking area.

During the construction, a bulldozer overturned, killing a construction worker.

The project was abandoned.

No one tried again.

These incidents might have just occurred coincidentally, but some people didn’t think so.

A Gap in the City

Today, Otemachi is one of the most valuable pieces of land in Japan.

Skyscrapers rise everywhere else.

But here, no buildings.

The atmosphere feels different - quieter, slower, almost cautious.

Some say Masakado still protects this place.

Others say it is simply tradition.

Either way, Tokyo chose not to erase him.

A Question for You

According to a survey by the Tokyo Metropolitan Government, Shibuya was the most popular spot in Tokyo last year. Throughout my guiding experience, I’ve been asked countless times for my personal recommendations in the area. If I told you that the Shibuya Crossing is a must-visit spot, you’d probably be disappointed. Everyone already knows about the Crossing, PARCO, and Mega Don Quijote.

So, here is a unique list of places in Shibuya that I’ve discovered through my own explorations. Don’t worry—you won’t find most of these in standard tourist books. I hope you enjoy them! Let’s get started.

1. A Free Photo Spot for Shibuya Crossing

They say seeing is believing. Take a look at the photos above—if you like the view, this is the spot for you. Many travelers want to capture photos or videos of the famous Shibuya Crossing, often flocking to the Starbucks or the corridor of the Keio Inokashira Line. Others pay to go up to Shibuya Sky for a magnificent bird’s-eye view.

While this spot might not be the highest, it is totally free! It’s located on the 12th floor of the Shibuya Scramble Square building (the same building as Shibuya Sky). It’s just an open space for this building, and the view from there is beautiful. It remains largely undiscovered by mass tourism. (Though, please accept my apologies if it gets crowded after I publish this article!). Head up there and enjoy the view without the crowds.

2. NachuRa: The Best Gluten-Free Cheesecake

My first encounter with NachuRa goes back to when I was preparing to launch my bike tour business. I was exploring Tokyo by bicycle to design our routes and ran into this shop in a quiet backstreet in Tokyo. My initial impression was, “Wow, this is pricey!” Haha. But I took a leap of faith, bought a slice of their cheesecake, and instantly fell in love.

A few months later, NachuRa relocated to the current location, which is between Shibuya and Yoyogi Park.

Their cheesecake is modestly sweet, melts slowly in your mouth, and tastes absolutely delicious. The temperature of the cake is perfectly controlled, making it incredibly refreshing to cool down after a long bike ride. Their cream puffs and butter cakes are also fantastic.

On top of that, everything they serve is 100% gluten-free. Some shops that boast about being gluten-free compromise on taste, but NachuRa is an exception. If you want high-quality sweets near Shibuya, this is the place to go!

3. NIGIHAYAHI TEA: An Innovative Japanese Tea Brewer

NIGIHAYAHI TEA is an innovative tea shop run by Mr. Yuta Maedera, a former barista at Sarutahiko Coffee, one of Japan’s famous specialty coffee chains. Interestingly, both Sarutahiko and Nigihayahi are the names of deities in ancient Japanese mythology. These two deities are said to have supported the first Emperor, Jimmu, during the founding of Japan. While these ancient chronicles are old stories and we can’t be sure of their historical accuracy, these deities are heavily associated with a “pioneering spirit.”

Mr. Maedera brings that exact pioneering spirit to his shop, wishing to innovate how Japanese tea is served by applying coffee-brewing techniques. His careful, precise technique is worth watching, and the tea itself will leave you feeling deeply relaxed.

4. Senbondo: A Hidden Wagashi Shop Run by a Local Couple

Tucked away from the busy streets of Shibuya, Senbondo serves fresh, traditional Japanese sweets (wagashi). Every morning, the elderly husband and wife make their sweets from scratch in the kitchen right behind the shop. While you can buy similar sweets at any convenience store, the quality here is on a completely different level.

Amazingly, this shop is practically invisible online. It barely shows up on Google Maps and has fewer than 10 reviews as of today. This is a true hidden gem! If you want authentic Japanese sweets in Shibuya, this is my top recommendation.

If you’re wondering which sweet to try for a true local experience, go for the Dango. These chewy Japanese rice dumplings on a skewer, coated in a sweet soy sauce glaze (called Mitarashi), are incredible—and they taste even better with the warm smile of the sweet old auntie behind the counter!

Here in Tokyo, the weather has been perfect for cycling lately (honestly getting warmer — summer has come), and our tours have been filled with amazing guests and lots of smiles.

Some of my guests join my bike tour without eating breakfast, or eat very little in the morning.

I know that eating a lighter breakfast is more common in Western culture, but in the middle of the bike tour, they start to feel hungry (or hangry). When you think of cycling nutrition, things like energy gels or protein bars might come to mind. But on our tours, we have another option: Japanese sweets.

Some of you who have joined the tour before may remember dango (団子), our absolute favorite energy source for riding through the streets of Tokyo.

For those who are curious about Japanese food, those who want to get back energy for biking, or those who miss dango from their time in Japan, I would like to introduce my favorite Japanese sweets.

What is Dango?

Dango has a unique, pillowy texture with just the right amount of “mochi-mochi” (that’s Japanese for perfectly chewy). Unlike heavy Western pastries, it requires a little effort to chew, allowing the sweet and salty flavors of the glaze to spread across your palate.

The crowd favorite on our tours is Mitarashi Dango, which is coated in a glossy, sweet-and-salty soy glaze. Imagine the combination of the warm, charred rice dumpling and the rich sauce. It creates a sense of “bliss” with every bite. Don’t be surprised if you’re reaching for a second skewer before you’ve even finished the first!

Dango Varieties

Dango comes in many varieties.

For example, dango (as in the photo above) is flavored with yomogi, a traditional Japanese herb. Its fresh, earthy taste balances beautifully with the sweetness of the red bean paste.

“Conveying authentic Japan.” This phrase is so abstract that it’s often difficult to truly understand. This is the first in a series of articles aiming to make this concept more concrete. This time, I interviewed Fumio Kuboki, president of KUBOKI TATAMI Co., Ltd., a company that manufactures tatami mats, which have traditionally been standard in Japanese homes.

1. Do You Fly Around the World?

I just returned from a business trip to Sweden and Italy for this interview. To convey the greatness of tatami, just waiting around won’t start anything. Whenever possible, I travel to the locations to convey its qualities directly.

2. Your Career Didn’t Start at a Tatami Shop?

Despite my family having run a tatami shop for generations, I had no plans to take over the family business at first. I moved to Tokyo for university and subsequently started working for a construction company in the city, where I was involved in equipment design and site progress management.

However, when I returned home in 2019, my father informed me about the difficult situation of the tatami industry. He implied, “If the market size 30 years ago was 100, today it is only 5, and in the last 10 years, nearly half of the shops have either closed down or become almost inactive.” I was absolutely shocked. Learning of this critical situation and driven by a desire to cultivate a new market, I decided to join the family business.

3. What is the Heart of Japan?

I still vividly remember my first sales trip to the United States.

“So, what exactly is the appeal of tatami?” asked my client.

“It is the heart of Japan.” I thought this was a very good answer, but he asked me again,

“What exactly is the heart of Japan?”

I realized my answer was far too abstract, and I couldn’t convey the appeal of tatami at all. I, the very person selling tatami, knew absolutely nothing about the product.

4. How Do You Explain Tatami to Someone Who Has Never Seen It?

“I need to learn more about tatami.” Fueled by my embarrassing experience overseas, I went alone to stay and work at an igusa (rush) farm in Yatsushiro City, Kumamoto Prefecture. Yatsushiro City is Japan’s largest producer of igusa, used to make tatami, accounting for 90% of domestic production. At the igusa farm, I learned a lot about the very origins of the material, getting covered in mud and experiencing the mud-dyeing process.

From each of these experiences, I try to convey the benefits of tatami in concrete and scientific terms. For example, tatami contains aromatic compounds like “phytoncide” found in igusa and “vanillin” resulting from the mud-dyeing process. Furthermore, the natural materials of tatami have a scientifically proven relaxing effect, making the parasympathetic nervous system dominant and regulating the autonomic nervous system.

The desire to preserve tradition alone is not sufficient. Only by properly explaining its benefits can it be understood and used. Once used, the tradition can be preserved.

5. Won’t It Get Moldy If Taken Overseas?

Actually, the dry climates found overseas are a much better environment for tatami (igusa) than Japan’s humidity. Also, there are different grades of igusa. High-quality mats not only maintain their condition for years but also develop an aesthetic appeal over time. However, if poor-quality materials are used, the surface will fade in just six months. I believe that by thoroughly understanding and explaining its value, I can properly convey what makes a good product.

6. What Are You Doing to Make Tatami More Widely Known?

I want to convey the greatness of tatami not just through words, but as an “experience”. In Fukushima Prefecture, our company operates “Tatami Village,” a complex that integrates factory tours, workshops, and a cafe. This was modeled after successful examples like the metal casting manufacturer “Nousaku” in Toyama Prefecture.

For people overseas or far away, we also have an Instagram account like a catalog. By posting various use cases, such as in a Los Angeles vacation home or corporate offices, we can visually explain the possibilities of tatami.

And then the Ginza store! Ginza, the world-famous shopping district in Tokyo, welcomes many foreign visitors. It will be the most appropriate starting point as a base for broadcasting tatami culture. Through workshops here, I hope to help Japanese people rediscover the greatness of tatami while also introducing it to people from overseas.

7. What Do You Want to Do With the Business Moving Forward?

In the future, I want to focus not only on selling products like coasters, but also on a business that provides tatami as a “material” for interior elements such as chairs, tables, and store counters.

I want people to know the greatness of tatami and Japanese culture by conveying not just tatami as objects (products), but also the experiences (contents) through the manufacturing process. One of my goals is to create a base where people from all over the world can directly experience the greatness of tatami. It would be great to eventually establish “Tatami Village” in Ginza.

After the Interview, I felt…

Conveying “authentic Japan” might be an expression that seems the easiest to understand, yet is the most difficult. KUBOKI TATAMI Co., Ltd., is not offering a superficial “tourist trap” experience; they are facing true materials with a gritty determination, firmly resolved to connect tradition to the future. Did the passion of a “genuine artisan” come across?

Talking with Mr. Kuboki made me question on the way home whether I am truly conveying the authentic charm of Japan in my own bike tours. One takeaway is the importance of explaining the background and giving my guests a chance to experience.

By the way, Mr. Kuboki says he likes yakitori, Japanese grilled chicken skewers. I thought I’d like to chat with him over yakitori next time. After all, yakitori is one of Japan’s representative meals... (To be continued?)
